Donna Elvira produces bean-to-bar chocolate in Modica, Sicily. Founder Elvira Roccasalva is inspired by recipes written by pastry masters in Sicilian convents. Please note: You may notice a white patina on the surface of the chocolate. This natural occurrence, known as cocoa butter bloom, and is common in minimally processed chocolate. Since these gorgeous bars are not over-refined and contain no added cocoa butter or lecithin, the cocoa butter from the beans may rise to the surface over time. This is not a flaw, but a sign of the chocolate’s purity and craftsmanship. It does not affect the flavour or quality in any way. As the chocolate is roughly ground, rest assured this texture is also expected.
